Blueberries with Coconut Milk

I found a recipe for homemade coconut milk at Crunchy Betty's Blog. This morning I blended the milk with blueberries and stevia for a great wake-me-up. The milk is relatively thin, so to thicken things up I used 2/3 cup of blueberries to almost a cup of milk.

Finding unsweetened coconut in my local store proved difficult, so I ordered four packages for about $3.25 each through Amazon. The nice, sturdy box they came in will be re-purposed for use in my pantry to hold onions and garlic. (Hopefully, a future post.)
